Hello, i have a 170,000 mile 2001 stock spyder. When I press the accelerator the car drops rpm from 1,000 to 500 rpm, if the car doesn’t stall then it will hesitate then slowly gain rpm.

Remove the plastic valve cover, start the engine, ask someone to push lightly the gas pedal. At this moment, you are face to the injectors to see if there is a leak or fuel smelling. If the injectors seals has never been replaced, it's good to replace them too. As the problem started after the injectors replacments, the logic say the issue should come from the injectors area.

Have replaced (coil packs, spark plugs, o2 sensors, injectors, and air filter) started 75/100 miles after injector replacement. Im thinking throttle body gunk, vaccum leak, or throttle position sensor. It seems as if there isnt enough air to combust properly leaving the car running rich
Did you notice anything odd about the pre-cats while you were changing the O2 sensors?

Was the car running normally after you replaced those parts?

What brands are you using?
Ideally, you shouldn't mix and match parts that lead to combustion. Stick with Denso on coils, plugs, injectors and O2.

The issue you're describing is consistent with fake Chinese "Denso" injectors. Can't idle but stays alive when you keep on giving it revs. The fuel trims tend to be all over the place as the plugs get fouled in short order.

So i dont wanna be too optimistic but i think i got it. I noticed when it was running that one of the PCV hoses soft and was squishing itself under vacuum. I went to autozone and got a 1ft section of PVC tubing and it fit perfectly. I was finally able to take it for a drive, and it drove like a dream. There was some white smoke on first cold start, after warming up it went away. Also side not have been hearing my muffler/cat/some metal thing vibrating on cold start, the. Vibration leaves after a few minutes of warming up.

So i did get my parts from rock auto, i dont think that they are rip offs.
MOST of the time the parts are legit - but - they are a wholesaler, and a quick internet search yielded some mixed results including some quasi-famous YouTube mechanics claiming they got some bad Denso parts from them.

In EVERY case, it looks like RockAuto exchanged or refunded them with no troubles. Based on what I read in my 10 minutes of research I would have no problem buying parts through them, although I never have before.
